The same strong, tanned hands that harvest our beans also allow us to serve the exquisite Utrillo peas when spring arrives. The skinless peas from Mr Torrent's garden have an excellent taste and texture, with a pronounced sweetness. Without a doubt, they are one of the jewels of our spring menu. We prepare the peas accompanied by lightly sautéed beans a la Catalana with bacon and black sausage, or garnished with artichokes, asparagus, onion, mint and black truffle oil.
